Peach's Bread

I came up with this when we found out Peach was allergic to corn. We use millet in place of corn in almost any case it is called for. It has a corn flavor. When we cooked this grain as a cereal, it reminded me of grits.

Peach's Bread
3 cup all-purpose flour
1 1/3 cup sugar
1 cup millet flour (rinsed and toasted millet put through grain mill to look like corn meal)
2 TBS baking powder
1 tsp. salt
2 1/2 cup milk
4 eggs, beaten
2/3 cup oil
6 TBS butter, melted

Preheat oven to 350 degrees.
Combine all dry ingredients. Combine wet ingredients, mix well; ADD  dry mixture to wet mix. Stir JUST until blended. Pour into greased 9x13 baking pan. Bake 35 minutes or until wooden toothpick inserted in center comes out clean.    Muffins - bake 15 - 20 minutes  (24 muffins).
