Cold Quinoa Salad

Cold Quinoa Salad
1 cup water
1 cup apple juice
1/2 tsp. cinnamon
1 cup quinoa, WELL rinsed & drained
2 large red apples, diced (braeburn, fuji or gala)
1 cup chopped celery, optional
1/2 cup dried cranberries (craisins)
1/2 cup chopped walnuts or pecans, optional
1 cup nonfat vanilla yogurt*


Place water, apple juice, quinoa & cinnamon in a sauce pan; bring to a boil over high heat. Reduce heat, cover & simmer until all of the liquid is absorbed; about 15 minutes. Cool, transfer quinoa to large mixing bowl & refrigerate 1 hour, covered.
Add apples, celery, craisins & nuts. Mix well. Fold in yogurt. Serve immediately.
*I don't use the yogurt or celery. Instead we usually always use Citrus dressing. I have also used grapes or blueberries  in place of craisins.
