Cinnamon Graham Crackers

OH YUMMY!!!


1/4 tsp salt
2 cups whole wheat flour
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 cup packed brown sugar
1/2 cup shortening
1/3 cup honey
1 tsp. real vanilla
1/2 cup milk
3 TBS granulated sugar
1 tsp. ground cinnamon

Stir together first 5 ingredients, set aside. Cream brown sugar & shortening till light. Beat in honey & vanilla till fluffy. Add flour mix alternately with milk to cream mix. Beat well after each addition. CHILL dough several hours or overnight. Divide into quarters. On WELL FLOURED surface, roll each quarter to 15x5-inch rectangle. Cut rectangle crosswise into 6 small rectangles measuring 5x2.5-inches.
Place on ungreased baking sheet. Mark a line crosswise acroass center of each small rectangle with tines of fork. Scor a pattern of holes on squares with fork tines.
Combine granulated sugar and cinnamon; sprinkle over crackers. Bake 13-15 minutes. Remove from pan IMMEDIATELY to wire racks to cool.
Yield: around 24
